June 10, 2018 I received the Victorinox Fibrox Pro Chef's Knife, 8-Inch Chef's FFP. I was so excited when it arrived. As a follower of American Test Kitchen I heard nothing but praise for this knife. In the past 3 months of use, the knife has been a huge disappointment. It's cutting ability is less than my dull knives I have at home. The final straw came yesterday when the knife could not cut an eggplant into slices. It just couldn't cut the skin. I picked up one of my "dull" knifes and it cut the eggplant.
I don't know what happened to Victorinox Fibrox chef knife since the rave reviews on ATK and Amazon site, but my knife is not the quality of everyone's ratings.
I do not recommend this knife.
After years of working with cheap knives, I was excited to finally get a proper chef's knife. Unfortunately the knife I received literally wouldn't cut through anything. I tried cutting the plastic shrink wrap on a pork shoulder and it just stretched the plastic out. I tried trimming the fat before smoking the meat and it was so dull I ended up switching back to a 20 year old Ginsu knife because I was genuinely scared I was going to slip and slice my hand open because it would not cut at all and I had to push the knife so hard while slicing. It just smashes tomatoes when trying to slice.
However, I don't think the knife itself was the problem, I honestly think the knife I received was used. When I took the knife out of the packaging, I could immediately see hundreds of small and medium nicks on the blade and the the knife had several large tarnish spots.
From the other experiences I've had with both Amazon and Victorinox, I really think Amazon just sold me a used/returned knife
It cuts things...and it cuts things well. What more do you need to know? Buy them already! Seriously though, we wanted to get some grown up knives because we like to cook and were tried of the low quality sets. I did my research and these are literally the best knives you can buy for the money (by the way, this is the same company that invented the Swiss Army Knife). Are you a professional chef? If not, you probably don't need that $300 chef knife and even if you were, I honestly doubt you would be able to tell that much of a difference. The blade came sharp, I keep it sharp with a honing rod and I bought a wet stone but have not had to sharpen it yet due to the honing rod doing what it should. The handle is very comfortable and the weight and balance make it easy to use. I enjoy using my Victorinox knives and have been impressed with all of them so far (have not had a chance to use the bread knife yet). I know someone is probably thinking, "but these are that pretty", do you want knives to cook with or wall art? Would you pay more money to fly coach if that meant they put a laminated Monet poster behind every headrest? Even if you aren't sure, buy these and you can always upgrade the ones you need to later and either have a backup or gift this to someone more grateful (just kidding, its your money so buy what you want :) If you are reading this and don't already know, do not put your knives in the dishwasher. If you do not plan to hand wash your knives, you aren't ready to invest the money into good knives yet since it will ding up the blade turning your nice knives into...well, sharp butter knives.
This is indeed a SHARP knife. I wanted to try it out as soon as I got it so I was prewashing it in the sink and sliced my finger nicely - so be aware that this is "well-sharpened" upon arrival. If the handle wasn't so cheap and cheesy, I would give this 5 stars. As it stands, the quality of the handle is not the same high quality as a knife which cut everything as if it was butter. The price of the knife is not that high either so maybe the company felt it could cut corners in the handle and put the production money in the knife instead. Makes sense to me and I can live with that. I like the knife and highly recommend it.

My love affair with this knife continues. Last night,at first I thought there was something wrong with my potatoes because the knife sliced through them as if they were butter but with nice clean edges. Oh my- simply impressive. My love just keeps growing. However, I am still disappointed with the company. I have gotten over the fact that the quality of the handle does not fit the quality of the knife. However everytime I put this beautiful knife into the cheap bendable plastic sheath that the company calls a " knife guard", I cringe. It is not washable on the inside and is more like temporary packaging.
Now, if the manufacturer reads these reviews, this is my advice to you: My other favorite knife is a gorgeous green plastic paring knife from Kuhn Rikon. It is sharp and designed as a total package. It comes with a heavy-duty molded plastic knife guard that is a joy to behold. It has a well-defined guard on the sheath. The sheath has 3 holes in it to faciltate cleaning. Even the plastic handle is nice. I LOVE LOVE LOVE everything about this knife. If Kuhn Rikon can put together this kind of knife and shealth package for $7.00 retail price, I suspect you can do a bit better with the handle and sheath guard for your more expensive chef knife.
For me, I have decided to search AMAZON to see if I can purchase a sheath for this knife separately.

Ok, I have gone full circle on this knife. I went out looking for a knife sheath and after all my complaining above I find that Victorinox sells sheaths especially made for this knife. While I was out there, I also read more reviews ( there are thousands of positive reviews) and many experienced chefs indicate that the knife handle is nice and does not slip as a smoother handle might when it gets wet. Well, the lightbulb went on. I think they are right. I also went looking for their paring knife and again found an incredible number of glowing reviews. Also found a smaller chef's knife. I am hooked. So I bought one of each of them and another sheath to go with each as well as a glove to protect my fingers now that I will have all of these beautiful and sharp knives!!
I guess you could say I have gone ga ga over these knives and so I had no choice but to raise this knife 5 stars. I am simply in LOVE. LOL

Stays sharp and hones with a steel very well. It's now my primary go-to knife in the kitchen until I find a better replacement. The bad thing about it is that the handle angles up toward the end which makes the blade sit tip-up in your hand. For me, at least, this is not a comfortable nor normal position for any use. It took a bit of getting used to and now I can use it safely, but this is the first knife I've used that when first using it, I accidentally stabbed my hand, requiring stitches. If you get one, please be cautious.
An excellent knife for 90% of kitchen cutting. It isn't full tang, but it's well-constructed to the point where I wouldn't worry about the blade ever separating from the handle. I've got size XL hands and the handle is very comfortable, and my partner who has tiny hands can also use the knife without issue.
Most importantly, the blade comes hair-shavingly sharp out of the box (I've ordered several for myself and family/friends as gifts). It's not the hardest steel, which makes sense for a chef's knife so it's very easy to sharpen. I recommend a Spyderco Sharpmaker if you want to sharpen this knife (not a sharpening rod, despite what you've seen Gordon Ramsay do on TV).
Overall, a chef's knife doesn't get better than this-- at least not at this price point. If you're a student, young adult or just a frugal person who wants a quality kitchen knife, this is the only choice out there in my opinion.
Bought it for 2,156(thanks to seller zero7enterprise), thought it was a good deal, although the handle is strong, the blade edge is sharp, it was badly scratched up n the tip was poking out the cover it came in as a result the tip was full of scratches and was blunt, no official victorinox box or cardboard the fibrox pro usually comes in, also the handle was comfortable to hold but smelled weird n my hand was itchy after holding it for a while, the heel of the knife has some brown smudges, overall its a good knife even if you cut using the pinch grip method or normally, its 8inch steel is perfect for most people.
Victorinox is a reliable brand . This is my second purchase of a kitchen knife from the brand. First was a paring knife that has lasted for well over a decade with constant use. I expect the same results with this latest purchase of the large Chef's knife . Love the comfort grip handle... nice weight balance and supreme razor sharp blade. Comes with a protective sleeve. Works like a charm... slicing and dicing for kitchen meal prep. *( Nice to see a price reduction with this wonderful Amazon purchase... which makes the buy even better ).
I LOVE this knife.I was looking around for a chef knife that wouldn't break the bank but would hold up in the kitchen. After reading a lot of reviews I settled on the Vicorinox Fibrox.
This knife feels great in the hand. The weight is nice and the grip is quite comfortable. The knife comes extremely sharp right out of the box and has held up extremely well with some light sharpening from time to time.
This thing cuts like a dream. No more hacking up my meat or squashing tomatoes. This is a very versatile knife and does a great job in the kitchen!
It is a typical victorinox knife, it can give many of the higher end knives a run for their money. It comes in hair cutting sharp, and with proper maintenance it can keep that same edge for some time. I have had this knife for about six months, haven't needed to sharpen it yet, just the standard steeling. It is still incredibly sharp, and although not recommended it is still capable of shaving the hair off my arm. The fibrox handle is comfortable as always, and that is the reason why it is used in so many kitchens around the world. You can, and I personally have utilized knives with this handle for an entire 8 hour shift and it felt just as comfortable at the end of the day as it had at the start.
This is simply the best price/quality ratio chef's knife out there. I've used several types of these knives and for the price you won't find much better. Some people do not like the handle, but I actually really do like it as it grips really well. I don't buy knives for looks but for quality and this is a long lasting knife when properly maintained.
This is the sharpest knife I've ever used. Cuts the vegetables like butter. Just be careful not to cut yourself and make sure not to include your skin or finger on the menu. Really really sharp! I did a video to show you how this knife cuts through paper.
Not bad, but not as good as reviews are telling, sharpness is ok, but I need to align it with a steel every time, if not it doesn't do well. Basicly it's a 10$ worth knife with a extra 20$ for the hype
Sadly, this knife doesn’t live up to brand expectations. It has a cheap plastic handle and is poorly balanced. I find it a chore to use and the blade doesn’t keep its edge for long. I expected it to be of similar quality as my Swiss Army knife, which I have used extensively for everything from cutting, slicing, and opening cans. The scissors were so good I was able to do minor surgical procedures and cut hair. I do not recommend buying this Victorinox knife.
Very sharp, easy to hold, good quality without being too heavy and an overall great chopping knife. The only downside is that the blade is slightly too wide to fit in my existing knife block.
I had a more expensive knife, but after watching America's Kitchen review, I decided to try it out.
It slices well, is comfortable and a lightweight.
I've been using it for almost a year now and it still slices well with minimal maintenance and is now my favorite knife.
Probably the best chef knife you can buy for under $50, maybe even $100. Solid knife that cuts great, and has a good feel. Only thing negative is that it doesn't hold an edge for as long as more expensive knives under heavy use, but with a few minutes on a Waterstone it's crazy sharp again. Well worth the price.
